Tethering 'quicky' !

I'm 99% sure that's the case but as it isn't listed as a feature on Vodaphone's website... Is tethering / portable hotspot enabled from the start, without having to root ?

its a feature in any gingerbread phone, its part of android 2.3.x

I don't think they can find out anyway. I'm probably wrong, but I saw it on the giffgaff fourms somewhere...

Edit: yes you can, but if they do fnd out, you'll probably have to pay a heafty sum. Not advised.

Re. the network finding out, I suppose it depends which network you're on and what you tether. I'm sure I've read somewhere that (at least on Giffgaff) tethering something like a PC is frowned upon but other than that, I tether my Android tablet and having used between 3~7 Gb over the last few months, I've never had any problems.

I prefer to use something like PDANet or CWM Tether, but I believe it is a standard feature. Whether they pay attention to it depends on the carrier, though there are several ways for them to find out whether you're tethering - Checking headers, measuring changes in packet TTL, that sort of thing.
