I am having a few problems with my new Desire S.

When I answer an incoming call it takes about 5 seconds for the speaker to come on.

Also, when I slide to unlock it seems to struggle to open.

Not sure if it is packed with rubbish running in the background but the phone isnt branded.

Any tips?

There could be accidental conflicting configuration/applications issue. Have you tried factory reset? I know it would erase everything but its better to reinstall than to live with slow device.

Bro, i guess there are tons of apps running behind your phone. Try using some task manager. If you have rooted your phone, try installing Seeder on your phone. It speeds up drastically. I have observed that, using an app lock application like SmartProtector etc. slowed my phone too.
