With my last phone I used a custom rom but I'm actually happy with the Android currently on this for now(It is rooted though, of course).

What settings are people using?

I just used tweakker from google play:

https://play.google.....tweakker&hl=en

It's free and set up my o2 uk fine with the exception of mms, which I don't use anyway.  data, calls and texts all work fine tho.
