Just wondering how hard it would be to put a reboot menu and screenshot button into the power menu on a ROM that doesn't have it such as Fish N Chips?

you need to deal with framework-res.apk  framework.jar  and  androidpolicy.jar
not very easy, but I succeed.
my tutorial is chinese, so I can't teach you......

To be honest, I, and I suspect others, would be happy with the stock overlockable rom with those reboot and screenshot options, seems to be the only rom with fully working cameras

I have my own modified ROM, 2.3.5 with all things work well. ICS style.
but it's hard to upload.
any idea about websites?

I flashed your rom with the OSF2 kernel and it hangs on the green android.
