Not really sure but I would say freeze anything you don't want using Rom toolbox and see if you get any errors! Or use uninstaller from play store it gives the option to move to a recycle bin before you delete it! Ive removed things like email, messaging, etc without any probs so depends what you taking out lol

I agree. Personally, I'd recommend paying for the pro version of ROM Toolbox - it's invaluable. You can use it to back up and restore apps/app data (doesn't always work, but useful when flashing new roms) and to delete system apps. As a rule, I don't really remove anything that isn't displayed in the app drawer, or I at least freeze it first and see the impact. I remove google search, gmail, google talk google plus... in fact the only google stuff I have on my phone is google account, google backup transport, google Play store, google play services and google services... but of course you'll need to leave other stuff like calendar sync and contacts sync if you use them. I also remove stuff like face unlock, voice recorder, voice dialling, news and weather, movie studio, live wallpapers, extra languages, the default launcher because I will have installed Nova, teh default keyboard as I install Swype, etc.
