I have an Omnia i-900v on Vodafone UK. Updating firmware was an absolutely painless process, I'm currently using Sectors Windows Mobile 6.5 rom. Great stuff. The in call recording can be started/stopped from a menu option on the lower right-hand side of the screen whilst in a call. Not sure where they get saved but you can play them back from the Notes application.

I e-mailed a fellow at Samsung support today, he says there are no plans at present to update to Windows Mobile 6.5 on official firmware. But that may change, keep an eye on the website he said.
