Check out the windows mobile 6 forum over at xda-developers and read through the threads on the different ROM's that the cooks there have posted. If you don't like any of them, there's also kitchens there that will help you cook your own ROM. The consolidated kitchen is my favorite so far and the one I used to cook my current ROM. Before you even think about doing any of that though, make sure you read, read, and re-read the thread on how to CID unlock your phone or you'll just end up with a very expensive brick. While I did make the TS image, I didn't actually make any of the plugins, which I'm sure you probably already knew.
