When I got my omnia on my storage it had loads of music which I deleted, but every time I connect using the USB to my PC the music comes back, where is all this music coming from and how do I stop this from happening.

Sounds like you have media files set to sync.
The music is just syncing between the pc and the device.
There is a setting in Activesync/Device Center for turnign this off.

I hate media syncing and don't even like using it on my Zune.
