Can I stop programs from starting at boot?

I came over a thread that described howto delete apps one don't use but I was wondering if it's possible just to stop the programs I don't use from starting? I am guessing there is a config file somewhere one can change to do this or?

I found an app called Startup Auditor, take a look at that. But I'm still looking for a way to control it "by hand".
