should be fine if android use the users system of linux

for an ex you could have a user for your wife and one for your children

each user would have its preferred apps its settings and so on

I presume this could be done if it would be possible to choose what folder/partition to mount as /Data at boot

I would guess you'd have to hack together some kind of 'recovery' to do this.
