HDMI is the standard for connecting Hi-Def video output to a display which supports Hi-Def.

For example, a Blu-Ray DVD player to a 1920x1080p display (and 720p - the lower hi-def standard).

It allows hi-def video output from your SGS3 to a supported monitor.

I have heard the SGS3 hdmi does not work well with 720p which is a lower hi-def standard.

So, if you have 1080p video you have recorded on your SGS3, you can display the output to a

big screen monitor which supports hi-def and has an HDMI input.
