Rearranging Programs

Hi, not being very technologically minded, I have being playing around with the files in my programs menu, I added and moved files around in to my new folders. But then when I return to my home screen the shortcuts up the top have turned in to '?' Question Marks. Is there anyway to change the directory location for these shortcuts.

Also I have heard it's possible to change the number of shortcuts in the upper part of the home screen, how do i go about doing that.
