I really don't know a great deal about Bluetooth, my last attempt a few years back to get my old T68i working with it ended in miserable failure and a Bluetooth dongle being sold on eBay. :)

I'm thinking of getting a new dongle now, so I can wirelessly synch my C500, but I'm not sure of a few things.

Firstly, if I leave Bluetooth switched on all the time on my phone, will it automatically synch whenever it comes in range of my PC?

Secondly, if I leave Bluetooth switched on all the time, is it likely to munch my battery life?

No, you have to tell it to sync using bluetooth from the activesync menu

Surprisingly BT being on has very little effect on the battery life. So little in fact that I never turn it off anymore.

Thanks for the tip.

I also seem to remember reading somewhere that Internet pass-through with Activesync won't work over Bluetooth. Is this correct?

No, it does work, I am using it now.
