Best video conversion settings please.

Before you point me to the thread about how to convert, I've been through all that, and it was very helpfull. But I'm not very satisfied with the results. I always seem to end up with a picture that jerks approximately every second. I use windows media encoder 7, have tried 9 but couldn't get to grips with it. I've also used the very handy and easy to use ASF tools for cutting the videos into 10 minute segments. This gets over the lack of FF & RW.

Anyway, I's be gratefull if you would all share your opinions on best settings. Or maybe even a different program for converting.
