Can anyone tell me how I upload a new skin to my SPV E200. Also how can I edit a skin to my own personal requirements?

Depends on the file you've downloaded, but a summary of the differences is contained in this thread :

Once you've installed your skin you will have an xml file in \Storage \Application Data \Home. Copy it back to your PC and open with Notepad. Now you can edit it to your heart's desire. There is all the help you need in the Customisation sections here.
