You've got a few different camera options but not a negative mode as such. Closest would probably be Greyscale or Sepia.

To access these press the right softkey (Menu) while in Camera app. Then choose Ambience and the option you want to try.

surly ther must b som soft ware right cos u can do it on fones like the orange m500??

That's interesting. I've just checked on my Pocket PC Phone (MDA III) and found that the version of HTC Camera on there (version 2.21) DOES include the Negative option. So why on earth did they remove that option from the version (2.5) included in the latest C500 rom?!

Looks like we should stick to the Pocket PC Phone platform huh? ;)
