i read the spv m500 has a 400MHz cpu, but the spv m600 only says it has a 200MHz cpu. therefore surely the m500 is better? or not? am i missing something?

It's not quite as straight forward as the M500 being better. They're different devices with different operating systems and different processors.

The SPV M600 has a Texas Instruments OMAP 850 processor. A capable processor. Although the 416MHz Intel Xscale in the SPV M500 does outperform the OMAP in benchmark tests it is possible to overclock the OMAP. Overclocked to just 240MHz (using a program called OMAPClock) the OMAP 850 outperforms the Intel Xscale 416MHz.
