The heat of chiles are measured in scoville ratings. To give you an idea of heat Jalapeno peppers can be rated between 2500 to 8000 scovilles. Now the question I have is what are your favourite hot sauces? Here's mine listed in heat order starting at the tame veriety. Mama Africa Peri Peri Hot Sauce This is a mustardy sauce and a bit of a required taste. it's not that hot as such but needs to be used over the right food to get the best taste. This is similar to a general tabasco sauce in heat. Scoville Units: 17,000 Wet Fart Hot Sauce This is my favourite sauce at the moment, the red wine really brings out the full taste and is ideal on donor kebabs. This is as hot as I use straight out of the bottle. I do have my eye on a few others though. Scoville Units: 40,000 Mad Dog 357 Special Edition The sauce comes with a disclaimer so you have to agree that you are of sound mind and not intoxicated etc, This stuff is leathal and needs to be mixed in small ammounts otherwise the heat is too extreme. As you can see below the sauce comes with a bullet keyring, inside this keyring is a tiny spoon so you can serve in very small amounts. Scoville Units: 600,000 ok and now leave the best till last (or is that the stoooopidest till last) Mad Dog's Revenge This is so hot it can not be called a sauce but has to be classed as a food additive. This is the second hottest chile "sauce" I can find and I am still waiting to actually try it out. I need to cook a decent chile and use this for flavouring but as the other half does nto like chile I will have to wait until I get some friends round. It's brutal stuff! Made me feel ill was that strong...

However at a drunkard BBQ we had a whip around collection to dare a friend to eat a teaspoon of this stuff. Daves Insanity Sauce Scoville Units: 51,000 Needless to say he was nearly instantly sick and and was playing the porcelain trombone most of the evening!
