Cingular 2125 and Windows Mobile Questions

I've read a lot of the posts here, searched around, read other sites and I still have some questions as a new Cingular 2125 user. I'm quite familar with Treo 650, Nokia 6620, so a lot of my thoughts probably have some basis from other platforms. I'll try not to be a complete idiot.

Can I rearrange the icons and add folders to the 'Start' displays? I would really like to move all my favorite programs to the first screen and put various things into folders. If so, how?

Can I copy/cut/paste text from one app to another? How?

Can I have the Today screen ONLY show running apps at the top? Why in the heck do you have to use the task manager to close most apps as well? :)

What version of Opera Mobile works best on the 2125? I was able to get the WM5 version 8.6 running, but it obviously expects touchscreen input for some things. Opera Mini works (mostly), but doesn't have as many features.

Can you get the icons for Java apps onto the 'Start' displays instead of having to launch them from the Intent application?

Can I set the phone to always default to T9 for text input?

Is there someplace with a Top Ten (or twenty/etc) apps/games/plugins/etc for WM5?
