If you have Windows Mobile 5, the contacts on your SIM will show a little SIM-card shaped icon next to the contact name, in the contact view. Not sure if you can copy contacts directly to the SIM card. However, from the Contacts list you can add new SIM contacts with Menu > New SIM Contact
