I've got the I900 with O2 (UK).

On my Home Screen it can't remove or move the "O2-UK" widget. How do i do this?

dont know about O2's, but if u bring out the widgets and at top of it u'll find a gear shaped button, thats setting button, u can choose which widget to show up or not......

thats neat... for i910 we have a widgetbar made by samsung but we dont get to choose what goes in it (as far as i know) which really sucks cause i dont even use half the things in there and i would like to put other things in there

You must be referring to the new WIDGET icon in the Samsung Widget bar. I think it's a new widget from the latest Omnia ROM (DXIA5). Anyway, try to deselect PLMN from the WIDGET list. PLMN shows your SIM status. I guess that would solve your problem. B)
