Cooking a room

I've read many tutorials, Sector 6.5 kitchen .. shokka's tutorial ... xda forums .. many many .. i understand how to remove apps .. add new apps ... doing some tweaks on the registry .. rebuild the room .. everything is great .... but i don't know how to start !! .. I've downloaded the official rom from samsung ... right click .. extract here .. got the update.exe ... i moved it to ExtractROM_exe .. but it didn't work... so where should I start ?

and for WinMo 6.5 ... from where I get the files ?

another thing .. Can i test the rom somewhere before flashing on my omnia ?
