I keep reading about people having to enter there APN settings after updating to the latest image. I'm with T-Mobile and my phone has what I presume to be a server name - general.t-mobile.uk but what is the password? Seems to be two characters - but does anybody know please? I don't want to update until I have this info

There is no need for a password or username in with the APN you mention above.
