How to customize 6.5 today screen?

I have searched the web and this forum and was surprised to see there isn't much information dealing with customization outside of customizing ROMs. Surely there has to be a way to remove items from the today screen, from the programs list. Also, is there no easy way to uninstall apps? I see an uninstall app but it only lets you uninstall the stuff you installed. I thought going into the CHome editor wold do the trick and I removed so called panels, but that didn't change anything on the today screen.

I am new to WinMo and am hoping I can customize without needing to create ROMs for every customization!
