As far as the stock ROMs go they are both pretty much identical, only changes are behind the scenes to improve the sound and get a bit more out of the battery apparently. So if you're on stock t-mobile and update to the latest stock there isn't anything to be unhappy about. As far as the custom ROMs go the latest versions are basically identical to the previous versions but with updated custom kernels that work with the updated bootloader. No real reason not to update, and if anything goes wrong with your phone and you need to send it off for repair just run the update again to wipe out all evidence that you've been messing around with different ROMs.
