Well, infact, that would be very useful for pretty much any headset with a single button.

I'm personally using the SE HBH-is800, and they're great, but it would be very useful to be able to skip a track without having to get my phone out of my pocket...

I suppose the easiest way would be to modify an existing music player to look for double presses, I don't know if it can be done at a lower level (grab a signal and direct it to the player)

Search droidshuffle on androidmarket. Only works with standard music app but works great.

Sadly won't work if the headphones got some functions build in :(, I suppose it would need to override the bluetooth control functions to work properly.
