I had a look at Davdrive lite but I don't think that's what I'm after and I totally don't know how I would go about using it.

You have two options:

1) Use an FTP server on your PC, and install an FTP client on the android device.

2) Use an online storage account that synchronizes between different locations, for example take a look at www.dropbox.com. That solution has an app in the market to synchronize with the PC

OK so I use coreftp lite to transfer files from PC to XBOX. Would that work to my phone? Would I need to leave Coreftp running constantly on my PC? How would I find my phones IP address and password? Can a complete computer numpty like myself do this without breaking either my PC or phone?

If you have a SAMBA server/windows file sharing set up, then you can use Astro with its SAMBA plugin to access it. This is only useful if you're on the same network.

Otherwise you'd probably have to set up some kind of VPN to access your home network first.
