Titanium backup to restore everything ? how ?

Had a daily full backup policy in my titanium backup to run daily. (2 policies. "Bacup all system data" and "Backup all new apps & newer versions"

Each morning I backuped the Titaium directory to my PC.

Having problems with flushing the r8 version, I pretty much started from scratch and after the r8 was installed it went to the wizard that appears after you first root the phone.

I skipped everything knowing I will restore all the definitions from my backups.

So I turned my titanium backup on, did a restore to everything more or less.

Still, the widgets set of my screens were not restored (set of which widgets appear in which screen), my 3G provider data wasn't restored, my exchange account and gmail accounts were not restored ...

Am I doing something wrong ?

What's the best backup option in Titanium Backup? All Users Apps or All User Apps + System Settings?

If I backup All User Data + System Settings, can I restore each system setting individually so that I can exclude the red ones?

I've just reflashed r9 from Online Kitchen (baked with Rom Manager, Titanium Backup and A2SD+) and some basic functions. I'd previously been using r9 (with Rom Manager and Titanium Backup with A2SD)and before relfashing I'd backed up my apps. Now that I've reflashed, I can't find Titanium Backup (I had it ticked in the Kitchen) to restore apps. I've baked twice to make sure it was in .zip file but can't find it on my list of apps. I'm sure I've missed something really obvious but can't figure out what it is. Thanks in advance for your help.

I couldn't wait...I've reinstalled Titanium from Market instead... (although ticked when baking, it seems Titanium wasn't on the phone for some reason) If anyone can let me know what I'd missed I'll be greatful nonetheless.
