How do I get the right SMS text settings for O2?

I've unlocked the phone and manually entered APN settings etc for MMS to O2 (contract settings) but I'm buggered if I can get the SMS to work. I've tried going to Messages>Settings>Service Center and changing this to the O2 number but it won't save. The number just stays on the screen.

What am I doing wrong?

sms settings are stored on sim and should be done automaticaly

That's what I would have thought but if I try and send a text I get an error message saying message could not be sent ....
