Used to be able to tilt my trusty Pulse to landscape and scroll through my album art, so why no feature in 2.1 or am I missing something?!

That was a part of the customised Pulse OS, I'm afraid

I just had a stock Pulse tho!

The Pulse was never stock. I always ran Huawei's customized android.

The only true vanilla it ever ran was the Froyo port :P

It was stock as far as I was concerned, i.e. never changed or customised!

Why does my San Fran (2.1) not have the awesome flip clock, animated weather and Sense ui that my 1.5 HTC Hero had?

Because ZTE devices don't have Sense UI

Just as ZTE phones don't have Canvas (Huawei)

alright sarky jock calm down. if you didn 't talk in riddles in your first post i might understand! .....vanilla to me mate means a flavour of ice cream, no clue what your on about
