I have an unlocked EU Streak currently running the O2 2.1 ROM (8105). Will I get the OTA, or will I need to flash back to 1.6 first?

Considering Japanese Streaks with 2.2will be hitting stores next week, I would say there's not much waiting left.

How do the OTA updates work???

Im currently running Steve's 1.1.1 on a Streak I bought off Ebay, and using my sim from my old iphone O2 contact..... So my phone is not registered to my number, will I be able to update using the OTA update if so how will this be doable?

I'm sure the file will be hosted so you can download it manually and place in the root folder of your sim card. Should be no problem for you.

Correction: It was announced yesterday, pre-orders start next week, and they will arrive in peoples' hands December. The article you linked to wasn't exactly clear on that point.
