Uninstalled Apps still in manage apps list

I have rooted and Rom'd my Orange SF to modaco 2.1 and some apps remained with the word orange in their name. I couldn't unistall using manage apps so I deleted the APK and their data using root explorer. However, they are still listed (with zero bytes) when I go to manage apps and cause an FC when I try to select them.

How can I edit the apps listed in manage apps. I don't realy want to have to reinstall the ROM and start again - but maybe I should!
