Getting a replacement handset, Can i root it and then copy my nandroid backup over?

I'd love to try another rom but want to be able to backup the phone and restore it if I don't like the rom.

How do I do this please?

I am also getting a replacement handset and I haven't rooted my my phone but I want to backup my texts and everything else I have on it. How?
