I dont think you can directly same your apps to SD Card but you can move your apps to SD card after installation.This function is build-in in froyo 2.2 but its not build-in in 2.1. You can try Hungarian Hedgehog RLS1 ROM. It has a option to transfer installed apps to SD Card called Apps2SD.

Id like to try it but im scared if bricking my phone or loosing everything ive got on there already.

In stock ROM i dont think its possible, bt who knows, i am nt expert may be its possible with some kind of rooted apps. And I dont think it bricks our phone, cause I have done it many time, U need to do a Clockworkmod recovery once and thats it.you can try as many costume rom as you want and for rooting, its build-in in most of the costume ROM and if not you can do that by just one app.:P
