I want a new dialler, one that has an option to record calls in progress, ie a button to press that records the conversation

Does such an app exist?

if there is more than one, which is the best?

On Flibblesan's R3 2.2 Froyo rom-without ZTE dialer, (the one I am running, so couldn't say if it is across the board), you can make a call, then press "menu" and select record.

It will record the call, including your voice, as a .amr file, which will be saved to the root of your SD card, playable in the phones media player/music player, etc.

I am using flb-froyo-blade-r3a-zte and it has that option too..:)
