I'm going to wait for the official update (allegedly January 12th), but will I be able to switch to a custom ROM if need be?

You will be able to do so. Also, going from the official update to any of Steve's builds is by no means a downgrade!!

It would definitely be an upgrade to go to steves rom

Here's what I don't get though, how can you guys know exactly what the update will be?

And will it be difficult to upgrade to Steve's?

Dell's official Froyo build has already been pushed to unlocked Streaks and to O2 locked Streaks. When AT&T eventually does release it, it'll be the same thing plus AT&T's bloatware minus O2s bloatware!

Will Steve ever come out with an AT&T version of his rom (not that it really matters).

Steve doesn't have different ROMs for different providers' Streaks. His ROMs can be used on any Streak. The only difference between different providers' ROMs is usually the branding and bloatware that goes with them.

Thanks for your help guys.

Will it be easier for me to upgrade to Steve's ROM if I wait until I get the official Froyo update? It seems pretty complicated to get there from 1.6 as of right now, but if it's not much harder I'll do it.

Actually no, its really straight forward. Follow Homeiss's guide to get to 2.1 and then use the instructions from Steve to get to 2.2

If "easier" == fewer steps, then official upgrade to streakdroid will most likely be easier.

I am going to wait and see what at&t allows, and go from there. The official roms have actually been quite good (stage aside), so I am interested to see how well the US version performs.
