Using the stock music and video apps, when you press the 'download more' button you get taken to the orange webstore - Any way to change this?

Would I need to open the app up (reverse engineer) and do some edits, or is it a framework tweak?

If you no longer want the orange apps at all, there are two things to do.

Firstly you could uninstall the apps.

1) Download Universal androot from the market

2) Open universal androot, and choose root.

3) Download busybox installer from the market

4) Simply open the app and allow various permissions

5) Install Titanium Backup from the market

6) Open titanium backup, select the backup/restore tab

7) Quick press the app you want to uninstall (orange wednesdays, orange store etc)

8) choose the uninstall option, however, be careful to ONLY delete orange related apps

This link tells you what you CAN remove (make sure its on the list before you uninstall.

The alternate method is installing a new ROM on your phone. I recommend using the modaco 2.2 froyo custom ROM. busybox is installed with titanium

if you use titanium you don't need to download busybox
