Best version of Windows to install custom ROM from for an absolute newbie?

So, my Vega turned up yesterday :D

I say mine, but it's actually for my Wifes birthday next week.

I've read the guides, watched the vids and am going to have a go at installing the R8 ROM as it's going to be a bit useless for her without marketplace.

I have access to various PC's at home and at work, so which (if it makes a difference) is the easiest for a complete newbie to install from?

I have access to:

Windows XP

Windows 7 32bit

Windows 7 64bit

Windows 2000 professional

Windows (I think) NT

Doesnt matter - WinXP or Win7 - either 32bit or 64 bit - have used them all without issue.
