I should be getting my phone tomorrow!! I want to flash it first thing!!

i tried reading and googleing but still dont understand how to do a few things!! please help!!

what is a nandroid backup and how to do it?

last step of paul's custom rom says "Select the option to apply an update zip" where is that option??
