Compiling an .img file

Is it possible to compile a system.img out of an "update.zip"? If yes, how?

Have you tried Yaffs Expert from market. It can pack/unpack .img files with yaffs2 filesystem. You can also flash your update.zip and after that, make nandroid backup of your system with clockworkmod. You can find system.img in clockworkmod's backup folder in your sdcard.
