You could do it that way -- but FWIW, it's a whole lot easier to simply use Titanium Backup. Among other things, TB has a filter to let you quickly browse through only the system apps. From there, it's just two taps to uninstall any of them. It's equally easy to convert any regular app to a system app, or to move apps between the internal and SD card storage (including apps that don't officially support this). No need to deal with physical files, permissions, access levels, etc.

Another thing I find useful is the ability to change the version of a system app: For example, I have a replacement version of the News & Weather (Genie) widget that has a transparent background. I have it backed up in Titanium, so it's very easy to replace the stock Genie with the transparent one.

Note that some of these things require the 'pro' (donate) version of TB, but it's absolutely worth $5.99 for everything it does. Best root app out there!

+1 for titanium backup, easily beats the other methods hands down, and cheaper than root explorer.
