They backup the app collection too. I can vouch for this, because I had a problem with a reflash recently and restored from a backup. All the apps I had on my tablet at the time of the backup came back, so they must have been there already. I don't know if it saves a game state - for example if I am on a certain level in a game when I play it, I don't know if it saves at that level, but the apps were definitely there in the backup.
