You might have to install another launcher from Google play.

I use launcher pro and with that you can set the number of home screens.

Not sure if its possible with the stock launcher as I haven't used it in a while.

There are plenty of other launchers that have that option , just try them and see which one you like.

Oh, ok. But would it not slow things down?

I would try launcher pro, It has never seemed to slow the phone down to me (maybe runs smoother than the stock one). Give it a try if you don't like it just uninstall it.
