Modify ROM from Clockworkmod Backup?

Hello, I made a backup of data, system, boot, recovery, etc with ClockworkMod program, but I would modify system.yaffs2.img to remove apps that do not interest me, and so on. Someone could tell me what steps I have to follow? How to unzip "system.yaffs2.img"? Why should I do to change it, no?

Edit: I found the "Yaffey" which is able to extract the files yaffs2 in Windows... I can unzip, delete the apps that do not interest me, and save and re-compress? or how?
