Removing sig from stock mail app?

Hi

 

Just got my (black) Hudl and really impressed so far.  I've managed to get the Chrome browser to hang a few times requiring a reboot but my biggest irritation is I haven't been able to remove the Sent from my Hudl signature from Mail

 

If I change it to something else other than a space the change sticks but if I remove it altogether it just reappears.  On my Samsung you can turn the signature on or off or change it but I haven't found a way of removing it altogether on the Hudl.  Am I missing something obvious?
