Probably the best product for what you want is Jeyo Mobile Extender which adds SMS folders to your PC's Outlook profile. Messages can then be manipulated on both the PC and the Mobile.

If you don't use Outlook on the PC, then they do a stand-alone version called Jeyo Mobile Companion

If all you want to do is create a backup on the PC (without being able to edit/view the data on the PC) then Dotfred's PIM Backup would be an option (doesn't work for MMS though).
