You can't. You will have to flash to a different ROM to get rid of those programs. If you have the i8000 this isn't a problem, but if you have the i920 there are none yet...

not really. You either take the ROMS others make and add from there or make your own. I would just get a lite rom (i.e nothing major in it) and add what you want from there,
