It's so cool... Sure you can. You just remove the apps in /data/app and /system/app folders. You can also add your own apps. The files in system folder can't be updated or removed unless you go into recovery or you have S-OFF but they don't use your internal memory (they use system partition). The files in data folder can be updated or uninstalled from your phone but they use your internal memory (unless you use a2sd or something similar).

We can make a list for you but you'll have to experiment yourself. I like roms with Sense HD because they feel smoother and nicer. But every custom rom out there (including the stock rom) is way to bloated for my taste so I take out most of the apps and insert a bigger APN list because I don't want to enter my providers (WAP and MMS settings) every time I change a rom. I don't like Cyanogen and other AOSP roms. Some people like them because they are supposedly fast but I don't have the same WIFI performance and Marketplace is really slow so I avoid those roms because they simply don't work for me.

This is a question that you can find in almost all topics concerning roms so do a little digging and you'll find all the answers. Also use google and you'll find many answers.

ROMs without sense seem faster to me too! see here for a how to... http://forum.xda-developers.com/showthread.php?t=806321 I went for a 120MB /system and /20MB cache, leaving 300MB for data! woo hoo!
