Is it possible to edit the kernel?

Is it a big task to actually edit the kernel? I would like to say switch some options from on to off say, example enable vpn or another module that is disabled like host and slave? I'm just guessing here but I think a kernel editor would be a great tool no?

Let me know what you guys think and if such thing exist and it's easy. It would be great if it was a matter of opening it in notepad and changing n to y but I doubt it.
