Is it possible to restore apps onto a custom or stock ROM?

Hi

I've currently running my phone with the stock ROM, but rooted with a large SD card with and Link2SD, so that I can install a fair number of apps.

I'd like to try out some of the custom ROMs out there, but my major concern is not being able to restore all my apps and configs etc. if I decide to:

1) revert to the stock ROM or

2) stick with one of the custom ROMs.

None of the custom ROM installation guides I've seen mention this.

Are either or both of these possible?
